Ingredients for Lemon Herb Salmon Packets

  • 4 salmon fillets (8 oz each)
  • 2 cups asparagus spears, trimmed
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1 lemon, thinly sliced (plus extra wedges for serving)
  • 4 tbsp olive oil
  • 2 tbsp butter, softened
  • 3 garlic cloves, minced
  • 1 tbsp fresh dill, chopped
  • 1 tbsp fresh parsley, chopped
  • 1 tsp fresh thyme leaves
  • Salt and pepper, to taste
  • 4 sheets of aluminum foil, about 12x12 inches

How to Make Lemon Herb Salmon Foil Packet Meals

Step 1: Preheat and Prep
Preheat your oven to 400°F or your grill to medium-high heat. Lay out four sheets of foil on your workspace. To prevent sticking and add flavor, lightly brush the foil with olive oil before placing the salmon and veggies.

Step 2: Layer the Ingredients
Divide the asparagus spears, cherry tomatoes, and red onion evenly among the foil sheets, creating a colorful veggie base. Place one salmon fillet on top of each vegetable bed. Top each fillet with a pat of butter, minced garlic, and a couple of lemon slices.

Step 3: Season and Herb It Up
Drizzle olive oil over the entire packet contents, making sure everything gets a touch of moisture to lock in flavors. Sprinkle each fillet generously with dill, parsley, thyme, salt, and pepper. Remember, fresh herbs release more aroma when exposed to heat, so don't skimp on this step!

Step 4: Seal the Packets
Bring the edges of the foil together and fold them tightly to create a sealed packet. This traps steam as the packets cook, creating an environment similar to a mini pressure cooker, which keeps the salmon moist and tender.

Step 5: Cook to Perfection
• Oven: Place the packets on a baking sheet and bake for 15-18 minutes. Check for doneness by carefully opening one packet—the salmon should flake easily with a fork and have a translucent pink center.
• Grill: Lay the packets directly on the grill grates and cook for 10-12 minutes. Flip halfway through for even heat distribution.

Step 6: Serve and Savor
Carefully open the packets, taking care to avoid the steam, and transfer them to a plate. Garnish with a squeeze of fresh lemon juice and a sprinkle of extra herbs for a pop of color. Pair with crusty bread or fluffy rice to soak up the flavorful juices.

Pro Tips for Perfect Salmon Packets

  • Know Your Salmon: Wholey salmon fillets are skinless and boneless, saving you time and guaranteeing an even cook.
  • Veggie Texture: Cut the asparagus to similar lengths and halve the tomatoes to make sure everything cooks evenly alongside the salmon.
  • Foil Tricks: Fold the edges of your foil upward slightly before sealing to prevent juices from leaking out, so you can enjoy a flavorful finish.
