Cajun-Style Salmon Salad

Prep Time: 15 Minutes
Cook Time: 8 minutes
Serves 4

Ingredients:

  • 4 (6-oz) salmon fillets, thawed if frozen
  • 2 tbsp. fresh lemon juice
  • 1 tbsp olive oil
  • 4 tsp. Cajun seasoning, divided
  • 6 cups salad greens
  • 1 (15 oz) can mandarin oranges, drained
  • 1 ripe avocado, seeded, peeled and diced
  • 1/2 cup pecan halves, toasted
  • Bottled salad dressing (your choice)

Directions:

  1. Coat grill rack with nonstick cooking spray
  2. Preheat grill to medium-high direct heat (350°F to 400°F)
  3. Drizzle each fillet with lemon juice and oil
  4. Sprinkle 1 teaspoon of the Cajun seasoning and salt to taste
  5. Grill salmon, covered, 4 to 6 minutes per side or until fish flakes easily with a fork
  6. Arrange salad greens, orange sections, avocado and pecans on each of four plates.
  7. Top with fillets and serve with dressing
