To thaw grouper fillets, refrigerate 24 hours or place in a bowl of cool water. To cook, you may bake, broil, sauté, or pan fry. Baking or sautéing delivers the best texture and taste. To bake, preheat about 425 degrees. Lightly oil a shallow baking dish, place the fillet, then season as desired. Cook until opaque. To sauté, first season, then add oil to the skillet. Heat, but not until it smokes. Place fillets skin-side down and cook 1-4 minutes. Shake sporadically to prevent sticking. Flip, if more than a half-inch thick, and cook another 1-4 minutes until opaque.
