These small, silvery-green fish, known as smelts or rainbow smelt, are loaded with healthy nutrients and packed with flavor. We've dressed these ocean smelts for you, meaning the head, tail, and fins are removed, so they are ready to cook as soon as they arrive in your kitchen.

Smelts, if you've never tried them, are a small fish (mostly 6 inches or so in length), are a common fish in cold northern waters, and come from the Osmeridae family, which is closely related to salmon and trout. Our dressed ocean smelts are exceptionally easy to prepare and chock full of vitamins and minerals.

How do you prepare these smelts? For an easy and tasty meal, whisk together flour, cornmeal, salt, pepper, onion powder, paprika, and cayenne in a bowl. Transfer your spiced flour to a plastic bag, shake the smelts inside the bag and flour until well coated, shake off excess and set your coated dressed ocean smelts onto a plate while heating oil in a cast iron pan and pan-fry in batches until golden and delicious.
