Sardine Fish Cakes
Yields: 6 fish cakes
- 6 cleaned sardines
- 2 garlic cloves, minced
- 1 medium onion, finely chopped
- 1 cup of breadcrumbs
- 1 egg
- 2 tablespoons lemon juice
- Pinch of salt and pepper, to taste
- Lemon wedges (optional)
- 5 tablespoons frying oil
- Mash sardines using a fork.
- Combine all the ingredients in a bowl and shape six individual cakes (one inch thick).
- Fry on low heat until both sides are golden brown.
Serve your sardine fish cakes with lemon wedges, a salad, or potatoes as a light bite or quick appetizer.
