Have you ever found something brimming with potential, but no one else could see it? At Wholey, that’s how we feel about beef neck bones. While you might be familiar with chicken or turkey necks, it’s uncommon to find other neck bones at your local grocery store, and if you did find them what would you do with them? These thick cuts of bone and meat can be intimidating if you’ve never cooked with them before. Let’s explore how to enhance your recipe selection with beef neck bones.

If there’s one thing beef neck bones are not, it’s a quick dinner. Unlike a steak, this cut cannot be hastily seared into an acceptable dish. Set aside a large amount of time to allow the neck to release all its goodness. You’ll get the best results from braising or using this cut in a broth, allowing the tough meat to break down and become tender and luscious. The exposed collagen and connective tissue found in the bones will create an unbelievably rich broth. Achieving such deep flavors is difficult, but beef neck bones can do it easily. To braise your meat, first season it and sear on both sides. Add it to a Dutch oven with red wine, beef stock, and any spices you prefer. Cover the Dutch oven and braise in an oven at 350 degrees for approximately 3 hours. Be sure to sear your meat before leaving it to braise; searing traps moisture inside the meat so your dinner will be juicy and flavorful. Be patient and allow the neck bones to cook slowly. In the end, you’ll have fall-apart beef reminiscent of oxtail or short ribs. We know once you try neck bones you will fall in love.

Unfortunately, since neck bones aren’t the most popular choice for beef, they can be difficult to find. Due to a lack of demand, local stores aren’t a reliable source. But you’re not shopping at any grocery store, you’re shopping at Wholey. We love providing you with hard-to-find, premium meats you can depend on. Much of our meat selection has a subscription option to keep you stocked up on your favorites. Try something new and join the Wholey family today.
