Cook Time: 20 minutes
• 2 – 3 whole Spanish mackerel (1 ½ – 2 pounds each)
• Salt and pepper to taste
• 3 – 4 fresh lemons
• 2 tablespoons garlic, minced
• 1 – 1 ½ tablespoons ginger, minced
• 1 – 2 teaspoons basil, minced
• 2 teaspoons of chicken bouillon powder (optional)
1. Make three or four diagonal cuts in each side of Wholey’s Market Spanish mackerel, through to the bone.
2. Season fish with salt, pepper, and lemon zest. Set aside.
3. In a small bowl, mix all spices thoroughly. Add vegetable oil or water to mixture for consistency (optional).
4. Gently marinade fish with garlic mixture by flipping whole fish back and forth until coated.
5. Refrigerate whole Spanish mackerel in marinade for up to 24 hours (optional).
6. Grill with charcoal or gas for about seven minutes per side depending on thickness, flipping as needed.
7. Remove from grill and serve on a platter with hot sauce and your favorite side dish.
