Sometimes making dinner can be a hassle. Maybe you just really don’t feel like making a bunch of dishes to be cleaned, and who could blame you, or maybe you need something quick and easy to take to a campsite to be made over a campfire. Our easy aluminum foil packet dinners work for both of those and just for those nights when you want everything to cook up together in one packet.
Chicken and Vegetable Dinner
This is so simple and offers plenty of variety as far as what you want to put in your meal. If you want more or fewer veggies, then do so as needed. You can also shred carrots and add them to the potatoes.
You’ll Need:
- 2-4 chicken breasts (depending on how many people you’re feeding you may need more or less)
- 1 package aluminum foil, with 2-4 pieces removed with enough space to fully enclose everything
- Spinach
- 3-4 Potatoes (thinly sliced)
- Cheese
- Zucchini and Squash (sliced)
- Seasonings
- You’ll need to season your chicken breasts however you wish. We suggest a bit of garlic powder, turmeric, and pepper.
- Measure out a packet to hold your meal.
- Place your thinly sliced raw potatoes on the bottom of the foil.
- Add your chicken on top of the potatoes.
- Add the zucchini and squash pieces on top of the chicken, followed by cheese.
- Add your spinach on top of the cheese last, so the cheese won’t stick to the foil.
- Wrap up your packet and put in the oven at 350 degrees Fahrenheit for 30-35 minutes or until the chicken is fully cooked.
- Remove from oven and serve!
Garlic Shrimp and Veggies
A seafood lover’s dream, this is a delicious and simple option for a quick dinner.
- You’ll Need:
- 1 pound of large shrimp, peeled and deveined
- 3-4 cups of chopped zucchini
- 4 cloves of garlic, minced
- Minced cilantro
- 3 tablespoons olive oil
- Paprika, salt, and pepper to taste
- Add all of your ingredients to a large bowl and stir to combine and coat everything.
- Place four pieces of aluminum foil on the counter and place the mixture on the foil.
- Fold the foil to seal.
- Grill or bake at 400 degrees for 15-20 minutes or until shrimp and veggies are thoroughly cooked.
Baked Tilapia Packets
Bring a bit of the sea to you with this easy recipe that’ll have you eating in no time. The prep is easy, the cleanup is even easier.
You’ll Need:
- 4 tilapia filets
- Salt and pepper to taste
- 8 garlic cloves, minced
- ½ cup of butter, cut into small slices
- 8 slices of lemon
- 1 pound asparagus stalks cut into thirds
- 1 pound cherry tomatoes, sliced in half
- Preheat oven to 400 degrees Fahrenheit or grill to medium.
- Place each filet on a piece of tinfoil large enough to fold tightly.
- Season each filet with salt and pepper.
- Take the remaining ingredients and divide by four. Top filets with garlic, then butter, then lemon slices. Add the asparagus and tomatoes, then seal the packets tightly.
- Place in the oven or on the grill and bake 10 minutes.
Hamburger and Potato Packets
If you’re really craving a burger, our twist on the standard hamburger is a great choice.
You’ll Need:
- 1 pound lean ground beef
- 1 package dry onion soup mix
- 4 small potatoes, peeled and sliced
- 2 cups carrots, finely chopped
- 1 large onion, sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 can condensed cream of mushroom soup
- Salt and pepper to taste
- Preheat oven to 375 degrees Fahrenheit.
- Mix the ground beef and dry soup mix in a bowl.
- Form four burger patties and set aside.
- Combine all the other ingredients, except for the soup, in a large bowl until well mixed.
- Place ¼ of the veggie mixture in the center of the foil.
- Top with the beef patty.
- Add 2 tablespoons of mushroom soup on top of each patty.
- Seal the packets and place the beef side up on a baking sheet.
- Cook 35-45 minutes and then enjoy!
Garlic Steak and Potatoes
This is a hearty option that everyone is sure to enjoy. Add some side vegetables or a side salad for a bit of your veggies with this delicious option.
You’ll Need:
- 2 pounds of top sirloin steak, cut into ½ inch pieces
- 1 pound baby yellow potatoes, quartered
- 3 tablespoons olive oil
- Salt and pepper to taste
- 1 tablespoon minced garlic
- 1 teaspoon onion powder or minced onions
- 1 teaspoon oregano
- 1 teaspoon parsley
- 1 teaspoon thyme
- Combine everything in a large bowl to mix.
- Divide the mixture between four sheets of foil, then seal the packets tightly to form your packs.
- Grill on high heat for about 10 minutes on each side or bake for 20-25 minutes at 425 degrees Fahrenheit.
