How to Make Cambas al Ajiilo
Step 1: Gather ingredients. For this recipe, you will need:
- Colossal, Extra large or Jumbo, cooked or raw shrimp. (Using peeled and deveined can save you prep time and easier to eat.)
- Authentic extra-virgin olive oil
- Crushed red pepper flakes, or dried red chili peppers, torn
- Sweet Spanish paprika if you can find it
- Dry sherry, white wine, or if you prefer, lemon juice
- Fresh parsley leaves for garnish.
Step 2: Pat fresh or thawed shrimp dry and season with kosher salt. Set aside to marinate for a few minutes in salt while you create the sauce.
Step 3: Place a saucepan over medium heat. Add garlic, red pepper flakes, or torn red chilis. Cook for roughly 30-60 seconds, making sure to stir the garlic constantly. Don't let the garlic get too brown.
